Royal Icing

This is the basis for a royal icing. Getting the icing to the right consistencies (piping and flooding) for cooking decorating is much more easily explained in video format! You can find the instructions for that in a horrendously embarrassing Instagram video I made.


  • 2 tbsp meringue powder
  • 1/4 cup water
  • 4 cups powdered sugar


  • In a large mixer bowl whisk together the meringue powder and water for 2-3 minutes. I do this by hand to make sure its nice and frothy. This needs to be completely dissolved and the mixture is very foamy.
  • Using a mixer, slowly add the powdered sugar, one cup at a time. Mix until the icing is very stiff.
  • If using multiple colors separate into appropriate number of bowls, add gel food coloring, and mix until incorporated.
  • If needed, add water to thin the consistency and add powdered sugar to thicken it up.
