One Pot Creamy Gnocchi with Sausage

Alright my loves. Here she is. She is creamy, she is fast, she is a one pan belly warming bowl of goodness.

Ingredients

  • 1 lb mild sausage
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 15 oz can diced tomatoes
  • 3/4 cup heavy cream
  • 1 package gnocchi
  • 2-3 cups chopped kale or spinach
  • 1-2 cups of mozzarella cheese
  • parmesan
  • chopped parsley

Directions

Brown sausage in a large skillet with diced onion and garlic on medium-high heat. Season with salt, pepper, and Italian seasoning

Once browned, add in the can of tomatoes, cream, gnocchi and your choice of leafy green. Continue to cook until greens are wilted and the cream has slightly reduced (about 6-7 minutes).

Reduce heat. Add in the mozzarella and stir until incorporated. Then add some more because cheese. Top with parm and parsley!

Notes: I often use ground pork and add my own sausage seasonings but any mild sausage flavor will do. I also have stopped mincing my own garlic and now get it in a jar so feel free to add more or less depending on your taste. This Italian seasoning is the freakin’ best and it’s made in NY so its close to my heart (the first time I picked this up was at the Ballston Spa Farmers’ Market so check them out if you are local). I measure both the greens and cheese content by “hand fulls” so take this with a grain of salt and not as gospel. Also just for fun I love measuring any liquid ingredient with these because they are just so fun, stack for easy storage, and give me more variety than a pyrex (they have the 3/4 cup size that I used above).
